Ginger and Orange Brussels Sprouts – (serves 6-8)

500g (1lb 2oz) brussles sprouts

30g (1 oz) butter

1 tsp grated fresh ginger

1 clove garlic, crushed

Zest ½ – 1 orange

 

  1. Cut the sprouts in half and peel any brown leaves.
  2. Bring a saucepan of water to the boil, add the sprouts and boil for 5 minutes, strain and cool with cold water if you’re not using immediately.
  3. In a pan melt the butter, add the ginger garlic and orange and fry for a minute.
  4. Add the cooked sprouts and fry on a high heat for 3 minutes.
